BETHLEHEM, Pa. – Just in time for National Burrito Day on April 3, an eatery serving made-to-order burritos, quesadillas, nachos and more has joined Wind Creek Bethlehem’s food and beverage lineup, and another new tasty spot is on the horizon.
A location of Moe’s Southwest Grill, a fast-casual restaurant franchise serving “high quality and fresh southwestern food,” opened Wednesday at Wind Creek Bethlehem’s food court, The Market at Wind Creek.
The renovated space previously housed a Green Leaf’s salad stand.
The Market has been undergoing various updates in recent months, with a new Starbucks location replacing Croissanterie – a former eatery that offered fresh coffee, filled-to-order croissants and other treats – in October.

Additionally, the food court’s lineup is set to further change in the coming months.
A location of Auntie Anne’s, a chain known for its hand-baked soft pretzels and refreshing lemonade, is expected to open in June, according to Bishoy Kolta, The Market’s general manager.
The new Moe’s stand, open 10 a.m. to 10 p.m. daily, serves a condensed version of Moe’s full menu.
Customers can enjoy popular Moe’s offerings like “The Homewrecker,” available as a burrito, bowl or salad, featuring fresh guacamole, choice of protein, seasoned rice, black beans, shredded cheese, shredded lettuce, pico de gallo and sour cream.
Protein options include grilled steak, adobo chicken, ground beef and organic tofu.
Other customer favorites include nachos, quesadillas and “The Stack,” with the latter featuring Moe’s queso, choice of protein, black beans, shredded cheese and pico de gallo stacked between two crunchy corn shells and wrapped in a grilled tortilla.
Moe’s Southwest Grill, founded in 2000 and based in Atlanta, is a fast-casual restaurant franchise serving “high quality and fresh southwestern food.”
Guests are welcome to “create whatever they’re craving” by choosing from more than 20 fresh ingredients, according to a description on the chain’s website.
Moe’s Southwest Grill has over 600 locations, including more than a half dozen other regional locations in the Lehigh Valley, Poconos and Berks and Bucks counties.
Atlanta-based Focus Brands Inc. is the parent company of Moe’s Southwest Grill and Auntie Anne’s, along with other well-known brands such as Carvel, Cinnabon and Jamba.

“After some experimentation, ‘Auntie’ Anne created a masterpiece — the same freshly baked goodness you know and love today,” the message continues.
The chain offers freshly baked soft pretzels, including specialty varieties such as jalapeno, pepperoni, cinnamon sugar and roasted garlic and parmesan, along with pretzel dogs, pretzel nuggets, lemonade and more.
There are more than 1,200 Auntie Anne’s locations worldwide, including around two dozen regional locations.
