Chef Dale Talde, the son of Filipino immigrants to the US, developed his passion for cooking at a young age in his native Chicago where he learned to prepare meals alongside his mother in the kitchen

USA. Villa Restaurant Group has opened an Asian fusion concept called Talde Noodle Bar in association with celebrity Chef Dale Talde at LaGuardia Airport.

What Villa Restaurant Group described as a “Chef-driven culinary haven” completes the company’s seven-unit, locally inspired food hall at the New York gateway.

The collaboration further solidifies the company’s dedication to innovation and culinary expertise, Villa Restaurant Group said. The offer brings together New York styles and Asian-American flavours, inviting travellers to indulge in a high-end dining experience.

The menu celebrates flavours, blending traditional Asian recipes with avant-garde techniques. From appetizers to entrees, each dish reflects the cultural tapestry of surrounding neighbourhoods, using locally sourced ingredients. Talde also provides sophisticated to-go options for travellers’ convenience.

He is the host of Tastemade’s ‘All Up In My Grill’. He was also a three-time cheftestant and judge on Bravo’s Emmy Award-winning culinary show ‘Top Chef’. He competed in Season 4, ‘All Star’ Season 8, ‘Top Chef Duels’ and became one of the show’s most popular cast members.

Talde has competed on ‘Chopped’, ‘Iron Chef America’, ‘Knife Fight’ and was also head judge on ‘Knife Fight’ Season 4, as well as guest judge on both ‘Chopped’ and ‘Beat Bobby Flay’.

He opened his first eponymous restaurant, TALDE, in Brooklyn’s Park Slope neighbourhood in 2012, later opening follow-ups in Miami and Jersey City. Talde debuted his first project in Manhattan with the opening of Massoni at the Arlo NoMad Hotel in November 2016. His second Manhattan restaurant called Rice & Gold opened in October 2017 at the 50 Bowery Hotel in Chinatown.

In Florida, Talde also had three locations in the food hall Grandview Public Market in West Palm Beach. They were called The Corner, Clare’s and Little Red Truck.

Together with his life partner he opened Goosefeather in 2019, named the following year by Esquire magazine on its Best New Restaurant List. In 2022, Dale was nominated for a James Beard Award – Best Chef in New York.

A full bar offers handcrafted cocktails, a curated wine selection and other beverages, along with strategically placed TVs to provide news and entertainment for guests.
